Gupchup



My ultimate soul food!! My students days I never missed an opportunity to have street-food, specially Gupchup or Aloo Chat. How many sweet memories were made standing by the gupchup wallas, eating and chatting with friends and waiting for my turn for the next gupchup to come. Now far away from home these are the next to best thing I can treat myself with.

Things you'll need for making the mouth watering Gupchup
Few Crunchy Puris

For the Potato Filling
2 Boiled and mashed Potato
1cup boiled whole yellow peas(Matar Dal)
1/2 cup chopped onion
1Tbsp chopped cilantro (coriander leaves)
1tsp finely chopped Thai green chilies 
1tsp Black salt
1tsp roasted cumin and dry chili powder (Jira lanka Gunda)
1tsp Chat powder
Salt to taste

For the Pani
1cup chopped Mint
1cup chopped cilantro
1tsp chopped Ginger
1chopped Thai green chili
1cup water

4cups Water
Juice of 2 Key limes
2tbsp Tamarind pulp
1tsp Chat masala powder
1tsp Black salt
1tsp Roasted cumin and dry chili powder (Jira lanka Gunda)
Salt to taste

Preparation

Potato Filling
Mix all the ingredients together. Give it a taste and adjust it according to your liking. Add more chopped chilies if you want spacier Gupchup :)

Pani
Grind the Mint, Cilantro, Ginger and Chili with a cup of water. Strain it and keep the liquid. Now mix the rest of the ingredients for the Pani. Give it a taste and adjust it according to your liking. You can add lime juice or tamarind pulp for extra sourness and more salt if you like, at this stage. 

Presentation
Nothing can match the experience of standing by the Gupchup-walla in the street, close to all the traffic and munching on the mouthwatering Gupchups. But at home there is no such experience, but the only satisfaction in the fact that it is hygienic and homemade.

Just before eating, poke one crunchy puri on the top to make a hole and fill it with the potato-filling. Dip it in the Pani and eat it immediately. And repeat :)
